Keeping the top?


I recommend you put the cake in a freezer for about 30 min.  long enough to chill the icing or fondant.  Remove the cake from the freezer and gently wrap in plastic wrap, then wrap in foil, then insert the wrapped cake into a food saver bag and vacuum seal or at the very least put it in a Ziploc bag and suck as much air out as you can.  The thing about cake is that if not preserved correctly, cake absorbs odor.  Do you really want a cake that will taste like salmon a year later?  You can also call me in advance of your anniversary and ask me to make you a small celebration cake and I'd be happy to do so.
